Broccoli tots with spicy sauce

Tots Ingredients (makes 15)

1 cup fresh broccoli
1 free range egg
½ white onion, minced
1 garlic glove, minced
¼ cup vegan cheese mozzarella like
¼ cup gluten free bread crumbs
1 tbsp Protein
1 tsp fresh mint, minced
1 tbsp fresh coriander, minced
Sea salt
Fresh grated black pepper

Sauce Ingredients

3 tbsp natural vegetable yogurt
½ tsp Sriracha sauce
1 tsp lemon juice
Salt flower

Method

Combine all sauce ingredients in a bowl and store in the fridge.
Preheat the oven to 200C.
Blanch the broccoli in boiling water for 1 minute then remove and shock with cold water to stop the cooking process and drain well.
In a bowl beat the egg and add the chopped broccoli together with the onion, garlic, cheese, bread crumbs, fresh herbs, Protein and season to taste. Mix well.
Form the tots with your hands (about 1 tbsp of the mix for each) or place the whole mixture to a plastic wrap, squeeze well into pipe shape and cut into tots.
Place the tots on a lined baking tray and bake until golden brown for about 16-20 minutes, flipping half way. Serve with the spicy sauce.
